MIA

I want to apologize for being so MIA these past few months. With being a full time teacher, and full time grad student, and moving into a new house, I have been more than busy! And I still am, but I am learning how to juggle all of my duties!
Soon I will have pictures of our new house. We have been living there for about 2 1/2 months now, but our living room furniture is currently being refinished and we are still in the process of fixing it all up to our liking! Let me tell you, though, I am in LOVE with our new house. I love that feeling!
I also love my absolutely wonderful job. I wake up everyday ready to go to work!
In 4 weeks, I will be completely finished with 2/3 of my graduate school coursework. I cannot wait for the day when I can say I am finished with ALL of my coursework! It will be here before we know it! :)

New Job!

I am so excited to be able to announce that I am officially a Junior Kindergarten teacher at PDS! I have had the privilege of working at this school for year now and already had a job for next year, but this is THE job that I have been praying, dreaming, and hoping for! Nervous? Ohhhh yeah. I have big shoes to fill and just want to do the best job I possibly can. But lucky me, I work with the best girls ever. They are awesome friends, mentors, and confidants and I just know they are going to guide me through this year! I feel so blessed and cannot wait for August to get here so I can get started.

June Already?


Whoa.... it's June. As in the month of our one year anniversary. How is that even possible? Time surely is flying by.

I have no new pictures to add to my blog, mainly because we have not done anything too picture-worthy lately and we have been busy and scattered during the month of May. So I'll just give a brief update! :)

I have officially finished my first year of teaching! I cannot even call the ending bittersweet, because I definitely did not want the year to draw to an end. I have learned so much from those sweet boys, my coworkers, and administrators and am truly blessed to work at such a wonderful school. I am counting my blessings and thanking the good Lord for giving me this amazing opportunity.

Alex has been traveling so much lately that I almost forget where he is traveling to! He and his company are doing amazing things and I am so proud of him, but Charlie and I sure do miss him when he's on the road! I know it will all pay off, though.

Our first house is now for sale!!!! As much as I love our cute little house, the key word in that statement is little. It's great for the two of us, but since it's buying season we thought we'd put it on the market and see if we got any bites.


I've started grad school summer classes and know this is going to be a looooong summer. I just keep telling myself that it's only one summer and it will be SO worth it next May! Plus with Alex traveling so much, there couldn't be a better time for me to be super busy with school. Ya'll just be praying for me! :)

I'm going to try to do better with blogging/taking pictures, but no promises for the next 2 months!

Spring Happenings

The Griffith family has been busy this spring. Alex's company has now opened yet another location in Little Rock, AR. This covers central, south, and northeast Arkansas. Needless to say, he has been gone ALOT lately. I've gotten very comfortable (with the help of my new alarm system) staying alone for weeks at a time, but I sure do miss him!

I finished my first semester of grad school (with a 4.0 I might add) and couldn't be happier about it! I will now be transferring over to Christian Brothers University to finish up my MAT. I'm taking 13 hours this summer, so I could use all the prayers I can get! :)

This past weekend I went home to Kennett for several things. I judged twirling try-outs (which I absolutely love doing) on Saturday morning, had a wedding on Saturday evening, had several high school friends in town, and celebrated Mother's Day with the best mother around on Sunday! It was a wonderful, fast, relaxing weekend in Kennett. One thing is for certain: I will never grow tired of going home for (short) visits. I love seeing my family, friends, and town so much!

I have also been doing some serious babysitting lately. I love babysitting, and I love it even more when Alex goes with me! The kids love him so much and get sad when he is not able to come with me (maybe because I have to be the mean babysitter and he's the super hero!?) Anyway, I'm saving up for several little trips this summer and have found babysitting seriously helps the bank account! Plus, I get to spend time with the kids I love.

I am wrapping up my first year of teaching and get sad just thinking about those sweet boys moving to Senior Kindergarten next year! Gosh, I've been so spoiled to such a wonderful first year. I have so much to look forward to next year.

Easter Weekend

This year, we did something a little different for Easter. My family decided to take a mini-vacation to New Orleans. I had Friday and Monday off from work, we had not taken a trip in a long time, and we love any excuse to get out of town! :) We couldn't have asked for better weather, and we did lots of fun things!
One thing is for sure: my family is one of a kind! No other family could even begin to come close to the Privett/Griffith clan. Love these folks.

Hot Springs!

Our group of college friends have started a little tradition of going to the horse races every spring. It's a good, fun way to have a reunion since we are all spread out now. This year, it was mostly Alex's fraternity brothers with a few of my friends! We stayed in little cabins on the lake and had an awesome time!

It's also a new tradition to go to dinner at Fuji after the races. We went again this year- all 18- of us, and won't be stopping the tradition anytime soon! So fun!

Napa

Last week, I went to Napa, CA with my mother and sister-in-law. We had an amazing trip! None of us had ever been, and I think we would all 3 go back in a heartbeat. The views are breathtaking, the food is amazing, and the wine is never-ending!

We spent the first day touring 4 vineyards with our driver, Dean. The second day, we booked a limo and spent the day touring 4 more vineyards. We knew we were sharing the limo with another group, but were a little nervous about who it may be. We were sooo relieved to find 2 Arkansans sharing the limo with us! They were sweet, funny, just as much fun as us, and most importantly, they were SOUTHERNERS! Northern people just aren't nearly as friendly and laid back as us "hicks," as I quickly found out our first day on the trip. The third day we rode around in our rental car and just explored and shopped.

We unfortunately had tons of trouble getting home from this fabulous trip, but ended up landing in Memphis only 19 hours late! This was no fun, but overall the trip was awesome and great memories were made!

March Madness

It's the middle of March and it is crazy around here!
I've been busy finishing up my grad school classes.... yuck. Alex's company opened up a new branch in Little Rock at the beginning of the month, so he's been traveling down there alot. I am so proud of him... he works hard for us! Charlie has been busy chasing shadows- yes, he chases shadows- all around the house. This is so cute for about 5 minutes, then it's just annoying. Bless his heart, he just can't seem to understand that the shadows aren't going away!

I just got back from Orange Beach late last night. I went with a friend from work and her 3 little boys. Can I just say that I had a blast with these guys!? Sure, this beach trip was different than any other one I've ever been on (obviously we have no kids yet), but it was so much fun! More than anything, it got me so excited for our future family trips to the beach!

Alex is leaving today to go back to Little Rock for meetings. I haven't seen him much lately, but eventually things with slow down and be normal again.

On Saturday, I'm leaving to go to Napa Valley with my mother and sister-in-law. The 3 of us have had this planned for quite some time now, and I personally can't wait! I've only been to California once before and loved it, so I'm really looking forward to seeing the famous wine country. I'll hopefully remember to take my camera this time so I can have pictures to share.

Last Thursday, my school had their annual Student-Faculty Basketball Game. This was my first time to experience it, and it was amazing! The boys get so into this event and it was the sweetest thing. I was considering playing for the faculty, but I felt a little too out of shape and a little small compared to some of those 6th grade boys! I did, however, have the privilege of twirling during halftime of the game. Once again, I am out of shape and haven't touched a baton since last July, but it was so much fun and most of the boys had never seen baton twirling before. And I, of course, never turn down an opportunity to perform, so I enjoyed it so much!

Well, that's a wrap on our crazy busy month. We love it though!

Shrimp Soup

If you like shrimp and soup, then you'll love this shrimp soup.

This is the perfect quick and easy recipe.

Here's whatcha need:
1 bag frozen cooked shrimp with tails off
1 block cream cheese
1 can corn, drained
1 can diced potatoes, drained
1 can cream of potato soup
1 can cream of mushroom soup
Cajun seasoning to taste

Mix soups, corn, and potatoes into a saucepan over low heat. Add in shrimp and cream cheese. Stir frequently until cream cheese melts and shrimp turns pink. Season to taste.

This makes awesome leftovers too. I usually refuse to eat leftovers and took this for lunch 2 days in a row!

Goooooodbye, Winter!

More winter weather is supposed to hit us tomorrow, and I for one hope it completely misses Memphis! I am seriously over winter. We have used all of our snow days at school, so we will have to make up any more that we miss. No thank you!

Also, Alex is in Little Rock for work and I don't want him to get snowed in there. Kinda miss that messy hubby of mine when he's gone!

I've been home sick all day today. I went to the doctor and have bronchitis and a severe sinus infection. Great. It was the first time I have had to go to the doctor since moving to Memphis, so the new patient paperwork took me a good 40 minutes to fill out. I got some meds though and hope to be feeling like my normal, spunky self soon.

No more snow!

Thaaaaaank goodness we had school today. Even though we had more bad weather during the night, the roads weren't too entirely icy and we were able to have school. I'm not kidding when I say I would have gone absolutely stir crazy if I had to sit at home with my non-4-wheel drive car another day. I'm too energetic for that, ya'll.

Anyway, how about a picture from our one good, 5-inch snow of the season!? Meet our Razorback snowman. He has a bit of a gangsta lean to him, but that's only because he's best friends with Ryan Mallett.

And for a completely random side note, I am completely obsessed with Cops. Like really, it's a problem. If I know I have to tutor or work late, I will TIVO it....... who does that!? It's COPS, for crying out loud! I wish I had an explanation as to why this sudden addiction came on, but I don't and the only way I know to deal with it is to watch more Cops! And also Campus PD, which happens to be set in Conway, AR half the time I watch it.

P.S. If you go to college at UCA in Conway, AR and not U of A in Fayetteville, AR, please refrain from wearing Razorback gear while getting arrested and being filmed for an episode of Campus PD. Thank you.

MIA

So I've been MIA from blogger world for several weeks now. School started back up from Christmas break and life is crazy again!
Alex and I made a "resolution" to eat healthier and start working out more. Unfortunately our schedules right now aren't allowing for us to work out every single day, but we are doing what we can and surely it's making some difference! But I must say, cooking healthy every single night is not fun, a chore, and takes much longer. There just aren't enough good healthy recipes to tide my cooking madness over!
I also started graduate school 2 weeks ago. It's mostly online this semester since I'm working full-time as well, but it's very time consuming!
I am beginning the parade of 2011 weddings a bit earlier this year, with my first one being this weekend! I love weddings, and it's a good thing: I already have 6 I know of this year! So this weekend, I am traveling to Atlanta with a few girlfriends to see the lovely Bridget tie the knot! And I just can't wait!
Alex and I spent this past weekend relaxing at the lake doing absolutely nothing. We broke our diet majorly, but hey, it's the lake! It's like a mini-vacation, and let's be honest, who diets while on vacation!?

Sad Day to be a Hog Fan

The hogs lost a heartbreaker against Ohio State in the Sugar Bowl on Tuesday night. Seriously, it was brutal.
Be glad you weren't watching it with me.
Although it wasn't the ending I was hoping and praying for, I am still so stinkin' proud to be a hog fan. 10-3 is a fabulous season in the SEC west (which is, in fact, the hardest and best conference in college football) and I cannot wait for next season!!


Then on Thursday night, Ryan Mallett announced that he was officially leaving Arkansas to enter the draft. *tear*
I know, I know. I should've already known this was coming and should've been prepared.
However, I still am one sad Razorback. He brought so much excitement and anticipation to Arkansas football. So much that I even named my pooch after him.
And even though I am sad and next year won't be quite the same, it may (and hopefully will) be even better!
